Sweet Summer Treats

Need to whip up a quick treat for a party or a BBQ?
Want something that is not heavy, yet cool and refreshing on a summer day?
Here are two EASY and TASTY desserts great for summer!

Lemon  Pie

1/2 of an 8oz container of Cool Whip
1/2 cup of lemon juice
1 jar of sweetened condensed milk
Pie crust


Mix together the cool whip and milk.


Then add lemon juice, and mix really well. Pour into the pie crust and chill for a couple hours. 

YUM!!


Next up is the Strawberry Jello Salad.

You will need:
16oz cottage cheese
8oz cool whip
1/2 - 3/4 cup of chopped pecans
3oz strawberry jello
Mandarin oranges (I usually use 2 11oz cans of oranges. I only had the 15oz can, plus I had a some more that were already opened so I added them as well.)


Mix together the cool whip, cottage cheese, and strawberry jello. Then add the pecans and oranges. I've also made this with crushed pineapple. I kind of like it better without the pineapple!

Let chill for a couple hours.




Or you could enjoy a delicious watermelon! What's a hot summer day without some cold juicy watermelon?!? Summers wouldn't be the same without it!

These boys came in after they had been working, as they like to call it. Max had been asking to cut the watermelon, so this was the perfect time. Max was making silly faces while I took his pictures, and some were actual laughs from his silliness. I have no idea what was going on with Carson. He looked like he was getting sleepy, but once the watermelon was gone he was back to 'working'.

Rocks

Rocks. Sticks. Tiny toys. To me, these things are junk. They need to be thrown away or taken back outside. To Max, its treasure! Sometimes I've picked him up from school and both of his pockets will be full of rocks and miscellaneous things he found on the playground. All of these things are special to him, and they are simple little things that he finds. Which is sweet, innocent, and part of his boyish charm.

I find them in cabinets. Under the recliner (which is where he says he 'works' on stuff). I've picked out a handful of rocks and a stick in the washer. He put at least 30 sticks in a drawer. They are in the backseat of my car!

I have a little ceramic container that I painted when I was little, which wasn't that long ago! ;) Inside, I had a smooth rock, a marble, some old pennies, and a few other things. I'm sure there were things that I 'treasured' because I thought they were so unique. I gave them to Max..because he found them.

Last weekend, we went to the riverwalk. Thank goodness these rocks were thrown IN the water!

Finally, I can breathe!

Whew!! The last several weeks have been BUSY, BUSY!

I did get some sewing time in -- I made a checkbook cover, using a pattern that I got from Tipnut. It turned out a little too small, but it's still cute! Next time, I'll know to add a 1/2 inch or so.

Easter morning/Max's 5th Birthday! Max loves to sleep in the living room! After waking these two gooseheads up, they had to check out their Easter baskets!



What boy doesn't love trains?! Tater loves them! He calls them 'coo coo cain'. So sweet!


These boys are big Spiderman fans too! Oh, how I just love it. Yea right. ;)


I LOVE a HAPPY MAX!



What Easter birthday would be complete without and Easter Bunny cake? It was a homemade strawberry cake. Maybe one day I will make another one and post the recipe. It's yummy! It's supposed to made with cream cheese icing, but the birthday boy wanted chocolate.



Max got a Transformer movie, some new art supplies, a slip-n-slide, and some Ben 10 toys.


Soccer has also consumed the last several Tuesday and Thursday nights. I enjoyed watching it, and sometimes I could really get in to it, but I'm glad it's over. Max really enjoyed it!

Max's preschool has a picnic at the park at the end of the year to welcome new families.

This was Max's last soccer game! Great kick, Max!


Max got a trophy. This trophy has his name on it. Last year's trophy did not have his name. After the soccer game, we went to Target, and Max ended up hitting his trophy on something and broke it. Ugh! I hope we can fix it.




Last day of K4. :( Max says he is a schooler now. Haha!


This was the K4 graduation ceremony. 


I love watching them do all the hand motions! They are so cute! Some of the children really get in to it.



Getting his diploma! I know I sure will be a sad (and HAPPY) Mama when he graduates from high school AND college. I just hope the time doesn't go by too fast. He is such a sweet boy!





Max and his sweet teachers, Mrs. Saundra and Mrs. Germaine. I know they gave Max a great start, and he will be prepared for kindergarten. I hope Carson gets a chance to go to this school too.


So now, everything is finished! I can return back to getting laundry folded and put up. We can stay up a little bit later. We can plan some fun things on the weekend, and hope that Carson is good! ;) We can work on potty-training -- which is going pretty well. Carson needs to learn when to tell me he has to go. He will stand by the bathroom and say 'Mama' several times before I realize he has to go. He has gone potty once, and he wants and tries to go every time he sits on the potty. After potty-training is complete, we need to work on getting rid of the PA-PA.

I have a little more time for sewing. SCORE!
